In Barcelona, these past weeks, I have seen carrot cakes all over the places. I feel it's the must have of the winter. I guess, I never have been addicted to it just because I never have the occasion to eat it often.

Each mouthful is a mixt of soft sweetness and comfort. The nuts bring some crunchiness and nice taste. To recap, it's a very comfort breakfast or snack. It's the piece of cake to have in a tupper and to bring at work or in a walk to the nature.

I hope this gives you envy to try it. I tried to put the minimum ingredients possible (as always). It's also true here that the carrot cake needs multiple ingredients.
